Thai tofu curry with Chilli Oil Mix Recipe
Ingredients:
Onions
Garlic
Tomatoes
Red chillies
Spices:
Kefir leaves
Bay Leaves
Lemongrass

Method:

We will start with the curry base:
Chop onions in big pieces and boil them till they are tender. Then in a blender put boiled onions along with garlic, tomatoes and red chillies. If you don’t like it hot you can remove the chilli seeds.
Then in a pan take some oil from Chilli Oil Mix and put in on low heat. Then add the fragrant spices . Moment they start to change color add the grinded ingredients and cook for 7-10 minutes. Stirring occasionally.
In another pan, shallow fry tofu and potatoes in chilli oil till they turn brown and crispy.
Now add tofu and potatoes to the curry base. Add a little water to make some gravy.
While the curry is simmering away, lets prepare coconut rice with Chilli Oil. Add all the ingredients and cook till rice is tender.
Serve hot curry with rice. Drizzle Chilli Oil on top for that extra oomph!!
You can substitute tofu with your choice of protein or any vegetable you like. Example eggplant or cauliflower would taste good.
